The perfect summer salad 

(choose organic, locally grown when available)

1-2 large hearts of romain

2 fresh tomatoes or a bunch of cherry tomatoes

1 large cucumber

1 red pepper

3 green onions, a bunch of chives or half a red onion

fresh basil, parsley and oregano to taste (2 tsp dried oregano can be substituted)

1-2  crushed garlic clove

half a cup of black olives

half- 3/4  cup of chickpeas

half a cup of crumbled goat/sheep feta cheese – optional

Aleia’s Gluten Free Croutons  -a couple handfuls

   Chop all the veggies and combine in large salad bowl.  Add olives and chickpeas and croutons. Drizzle directly on- 3         tablespoons of apple cider vinegar, 4 -6 tablespoons of extra virgin olive oil, crushed garlic, sea salt and black pepper to taste. Add chopped fresh basil, parsley and oregano. Toss gently.  Add feta cheese if desired.

Serve on a lovely large platter.  Garnish with parsley and a lemon wedge. Perfect as a side to fish, soup, or a light main meal with other salads for shabbat lunch.
